Vegetables ready for grilling

Start with your choice of vegetables that you want to grill and cut them evenly. Generously add some salt, add freshly ground black pepper and some oil. Add some fresh thyme (optional) and give everything a good mix.

On a hot grill pan, place the vegetables and start turning the vegetables when you see some grill marks on the first side. Allow to cook until the vegetables are evenly charred and soft.

Serve as a vegetable accompaniment to your favorite meat dish.
